Who makes yam fries?

It was just Thanksgiving here in Canada, man I forgot how good yams are, LOL. I am thinking of making yams baked as wedges like a potato, any suggestions on how I should do this, like seasoning or something?

    You can batter them in egg white and bake at high temperature (with some olive oil spray).

    Give us some more info fella, they sound good. But how do you batter with egg whites? cooking times?

    I just read that Ms Olympia (can't remember her name) eats em, I've never cooked them though.

    I would just cut the yams into chips. Whisk up some egg whites and dip the chips in the whites. Place onto some cooking paper (sprayed with some olive oil spray) and cook in a hot oven until golden.

    I might try it this weekend and get back to you...
