lovely moist chicken!

right some people might have a diet that restricts fat, and when cooking without oil sometimes the chicken is a bit tough

try this out

fill a large pan with water and bring to the boil, you can add a stock cub or seasoning to the water of you like, add your chicken to the boiling water and let it boil away for 5 minutes then remove from the heat and cover with the lid. let it sit for 45 minutes in the hot water. then ta-da lovely cooked chicken, that is ultra low fat, and lovely and moist!.....you can do this with turkey, steak, pork.....

enjoy!

If you want carbs with it do exactly the same just add some Rice as well nice low fat jumbalaya.
    Peppers
    chopped chili
    worcester source
onions and garlic if you don't want people to talk to you.
    (tabasco if your brave)

complete meal with the same result.

do this for lunch a lot and stays moist if you leave it overnight for lunch the next day.

pete not sure if it is totally cooked after 5 minutes, i think it needs to rest in the hot water with the lid on for the 45 minutes to cook it right through, i suppose you could cook it on the boild for 10-15 minutes and then it would be nicely cooked but i prefer to leave it in the hot water for 45 minutes and have a stock cube in the water, it flavours the chicken nicely!

This is excellent: Cut chicken (or two) in half at the breast bone, but not through the back. Open the chicken, inside down, breasts up, on a broiler pan. Season inside and out with favorite seasoning. Roast in 350-375 degree oven for roughly 2 hours or until the skin is nice a browned. [^]

LOL, yea. If you want you could buy some low sodioum chicken broth and boil the chicken in there. Add some Corn Grits and you could make some nice polenta. Or even some soba noodles and have like a chinese hot pot deal.

    6 Chicken Breasts.

    Sprinkle on Johhny's Seasoning Salt
    Sprinkle on Garlic Salt
    Dash of Pepper

350degrees for 40minutes. Makes outstanding chicken. Easy. Delicious. Gives me chicken for the next 3 meals or so (I eat a few right away too ;p ) and all I need to do is prepare the veggies ect when I'm hungry.
