1-2 for major muscle groups, i.e. legs, back, chest.

1 set for shoulders, biceps, triceps

    Yeah its enough, for example:

    Bench Press 5x5
    Military Press 5x5
    Dips 5x5

Chest gets 5 sets, plus additional work from dips
Shoulders get 5 direct sets, then 10 more from the bench and dips
Triceps gets 5 sets, plus 10 additional sets.

Plus that hitting from all angles is bullspit.

    Bench
    Incline Bench
    Military Press

All done for 5x5 will be fine, triceps will get plenty of stimulus. You may find it too much for your chest though.

Yep, do bench with a barbell and incline with dumbells if you can.

Deadlift is kind of a mandatory back exercise in this routine.

2nd exercise should be either a row or pullup variation.

Finish with either barbell curls or DB curls.

sounds good as for legs should a variation of the deadlift be done in aid with squats
    ie squats/deadlift/?

Squats are the daddy on your leg day.

Add either stiff leg deadlifts or good mornings and you're sorted.
