pancakes

makes one girl sized portion:

mix together 30g oats, 3 egg whites, 1/2 scoop protein (i use vanilla), splenda, raisins (optional). heat frying pan with fry lite, pour in mix, cook until almost set, flip it over to cook the other side. it makes a thickish, puffy pancake.

variations:
1. add grated apple or pear to mix
2. add mashed ripe banana to mix
3. slice apple, arrange in concentric circles in frying pan, pour on mix (it looks like tart tartin when you flip it)

tried carb free one this morning by omitting oats, tasted more like a normal pancake. was a bit thick, would've been better cooked in two batches.

    i would really like to know what splenda is, is it availible in the uk? what exactly is it?

    Yeah Splenda is available in the UK, its a sweetener (sucralose) that is "made with sugar and tastes like sugar"! Not sure how it is exactly made but u use similar volumes than you would with sugar but it is much lighter!

    I used soya protein (vanilla) for the pancake by the way..
