safest foods to cook a few days in advance

hey all,
 
ive been reading a few threads about cooking food in advance. at the moment if im making pasta and mince meat, i make 2 or 3 portions, 1 or 2 for that day and 1 for the next day. but i think i could really benefit from spending an hour or so every 3 days cooking meals.
 
in the past ive tried cooking a load of chicken at a time and keeping 3 days worth in the fridge, but i found that if i eat more than 2 chicken breasts per week i get really ill.
 
so anyone got any recipes (protein,carbs (and veg), and fats combinations) that are easy to cook and keep for up to 3 days?
 
ive just seen swordfish's thread with chicken, peas and sweet potatos in tuppaware.

also one last question, i often buy frozen salmon fillets that you can in a pan from frozen, but is it then safe to reheat them later in the microwave?

    Yes I personally would reheat them again in the microwave, just make sure they are heated thoroughly.  Be aware though, the taste/texture quality may be impaired.

    I favour stir fries for cooking in quantity and then keeping in the fridge for 2 or 3 days.  You can use a variety of different protein sources (chicken, lean beef or pork, prawns, salmon etc) and plenty of veg.  Add rice for carbs.  Also nice cold.

    can you eat cooked rice cold? i thought it would you ill.

    Every Sunday I cook all my chicken breasts and lean burgers for the week. Keep them in a cold friend and this usually does me until at least thurs/fri.

    Eating cooked food that is not out of date after five days is absolutely fine but I wouldn't recommend leaving it much longer.

    A lot of people exaggerate how quickly food goes off.

    i have frozen chicken which i leave in the fridge before i go to work and cook it after i gym in my george foreman grill it takes about 5 mins and veg takes that time and that includes boiling the water so why cook loads in advance.
