Basic heavy free weight pressing would be my main choice for shoulder work...

    Military Press
    Push Press
    Dumbell Press

a heavy mass builder to build the medial delts would help. what do you do already?
my favorite is standing barbell press behind the neck. but if these are uncomfortable then you can do dumbell shoulder presses. note that pressing behind the neck can cause problems if you lack flexibility and balance in the upper body (ie. tight or shortened pectorals/lats which result in additional strain on the shoulder girdle). lateral raises are another one you can use, but I like to put a heavy pressing movement first most of the time (do lateral raises on and off for variety). the upright row is a good one too, but bothers some people's wrists.

An age old debate i'm afraid.

My opinion for building mass is lifting as heavy as you can for 6-10 reps over 3-5 sets.
