struggling for meal suggestions... help needed

hi all
 
I'm looking for some chicken meal suggestions to be prep'd and eaten the following day. the chicken, rice and brocolli I've been serving up for the last 12-18 months is driving me insane.
 
ideally something simple/easy prep as I only have a couple of hours in the evening due to my long commutes. looking for something around 600 cals, using a chicken breast and a carb source other than rice. don't mind eating it cold or I could blast it in the microwave at work no problem.
 
any suggestions would be really appreciated.

    Chicken with spices, served in some wraps... Simple, tasty and quick to make. You can use different spices or condiments to jazz it up too.

    that's not a bad suggestion, cheers. to be honest I'd tried to stay away from bread/wraps but I think if I eat anymore rice I might crack up.

    I usually cook in bulk every 4 days or so and have a source of carbs, veg and meat in the fridge to make meals with. At the moment I have couscous, pasta, grilled chicken breasts, and oven roasted vegetables ( aubergine, peppers, onion, courgette) all in tubs in the fridge. Only takes an hour or so and the options are endless really.

    I have chicken, rice and spinach everyday but I found a few things that helped make it a more interesting meal.
     
    • I cook the chicken breasts for the week in one of those Maggi seasoning bags, then freeze them.  Lovely flavour and seems to keep them moist and almost no prep time in the evenings.  Just take a breast out of the freezer, into my tuppaware with some spinach each night.
    • I was eating cold rice but now bring those little microwave pouches to work and blast them for 2 minutes (only have half but warm the other half up the next day).  Chicken is still cold, but the warm rice makes all the difference
    • I bought a few little pots of hummus to go with it.  Flavours, adds moisture to the meal, good fats and only just over 100 cals for a little pot.
     
    I do still get a bit bored but I'm starving by lunchtime and I always seem to enjoy it.
