It think it has a lot to do with the fact that if your a veggie you need to pay a little more attention to your diet and therefore veggie tend to eat better than your avaerage run of the mill meat eater.

you can be healthy or unhealthy as a vegetarian or non vegetarian.

However veggies have to choose their food more carefully to get a balanced diet.

Vegetarians can still have a bad diet. Even the vegetarians that eat fish, eggs, and dairy products...

Can she not provide you with a few examples of this research she has done stating that vegetarians are more healthy than meat-eaters?

Her supposed answer doesn't really satisfy your question to her from what I can see. What are her exact reasons for eating dairy and eggs and not meat? If she knows her stuff.. then can she not prove it with some actual facts or studies?

actually dont be suprised if she would be able to produce the said studies, i have personally seen several.

There is no cut off point where more plant based foods stop being healthier in expense to animal products.

But fundamentally i think it is still a very small difference (and thats a non meateater saying that) and I think people who become vegetarian for health reasons often change it later, and those with ethical reasons for not wanting to support animal industry seem to stick to it much better.

it's just not as black & white as that, high consumption of read meat is associated with a higher risk for some health problems, but then there are nutients in meat which are difficult to obtain from a vegetarian diet unless you are clued up about nutrition

Any discussion of this on here tends to get heated with a few of those who eat meat seeming to 'crow' about how they love meat and trying to deliberately offend the non meat eaters.

fwiw I used to be vegatarian but have eaten small amount of meat and fish over the past 5 years or so and feel more robust for it

From an athletic bodybuilding point of view vegetarians/vegans are at a slight disadvantage, though they can still excel. From a health point of view I see no advantage, so long as each diet is balanced as possible. Many peoples reasons for becoming vegan/vegatarian are ethical, which IMO is more appropriate than for health reasons. I personally eat meat.

Just to add my wife went through the veggie stage as a teenager and was told by her GP to start eating meat again after becoming underweight and anemic.

yeah there used to be a lot of ignorrance around the issue which i think is slowly clearing up. I think vast majority of doctors would not say that any more.

It's not a vegiterians eating habits that annoy me but their superiority complex, they think they're so moral and ethical because they don't eat Shaun the sheep.

i think thats not a bad way to highlight that its actually flesh that is being eaten.

I mean you may think i have a superiority complex just because i think eating meat is wrong, but i cant see where the superiority comes from since i would be very happy if you were a veggie as well

But having said that, i know there are some who thing they are all high and mighty and perfect because they are vegan and wear hemp sandals and listen to nepalese traditional music... But i think they are minority among the 300 000 vegans and 3.5 million vegetarians in UK.
